Leek and radish soup.
















Veal scallopine with flaxseed meal instead of breadcrumb.  Roasted eggplants, roasted butternut squash, caramelized carrots.














The flaxseed meal was an accident.  Meant to be made with almond meal, but as I was getting my ingredients out, realized I was out of almond meal and all I had was flaxseed meal so I used it anyway.  It was edible, but I wouldn't recommend.




Grilled chicken and veggie skewers at Calypso Cafe. Rice, corn, green beans untouched. Everything else, devoured quickly!



NOT PALEO
Tasting sample from farmers market.  Rabbit braised in apple cider, on top of rutabaga and parsnip puree.  The puree was loaded with delicious butter and cream.  Will definitely try to make rutabaga and parsnip puree without the butter and cream though.

Whole foods buffet. Fish, chicken, beef, kale, cauliflower, eggplant, beets.




I'm not hungry. It's tonight's WOD. Don't know if it's nervous eating or me just trying to get as much energy as possible to maximize my chances of not literally falling over and dying during the WOD. But it's definitely the WOD. I'm scared.




Grilled turkey steak, sauteed spinach, and Roasted veggies from Quench Restaurant (or Wings O' Flavor)



It's a healthy fast food place I just found by chance at 3109 N Halsted. They go by both names. Half of it sells healthy foods, the other half wings.  Grilled turkey cuts, grilled fishes, veggies. Lots of spices and herbs. They can reduce the salt if you ask cause everything's made to order.


Those little nut things would be walnuts.

Rotisserie chicken and salad.



Man, those costco chickens are like chicken shaped balls of salt. Did go to whole foods first for their no salt chicken, but they ran out.
Krill oil. New find at Costco today.












Beef stew.




Has a bit of potatoes in it cause it's the last portion from a big batch I made pre-paleo.

The meatballs are pre-packaged grassfed beef meatballs from Tallgrass. No breading used.

Homemade paleo kit














.75oz grassfed beef jerky
2oz nuts (walnuts, pecans, pine nuts, macadamia)
About 1oz dried fruits (cranberry, blueberry, strawberry, mango). I forget how much I actually put in there.
Salad.

I have come to really love butternut squash and beets this winter as we've tried our best to eat seasonally.  While I can't wait for the spring produce season to start, I will really miss these guys.

8 oz grassfed cow milk.
I know. Not paleo. But it's milk we already had and we're not about to pour it down the drain. We're drinking it till we finish it.

Salad (mixed greens, sundried tomatoes, walnuts, clementine, egg).
















Chicken and grassfed beef chili on butternut squash. Chili is Paleo.

Half a Trio bar from Costco. Not bad.
Ingredients: cashews, almonds, pistachios, fruits (pineapple, mango, papaya), sesame seeds, sunflower seeds, pumpkin seeds, dates, raisins, rice malt, natural flavors, evaporated cane juice.
It's not ideal, but it could be a lot worse. No additives, no preservatives, minimal added sugars for a snack bar.




Beet/onions/fennel salad. Salmon and granny smith apple salad.




Coffee.



Don't know what to call it. It's like ratatouille but with grass-fed ground beef on a bed of spaghetti-stringed zucchini and carrots.

Paleo+ Challenge Starts

I will be tracking everything I eat for the Paleo+ challenge on this blog. Hopefully I don't get lazy and can keep it up.
